The ingredients needed to make Feta saganaki:
  1. Make ready 3-4 sliced pieces feta cheese
  2. Take 1/4 cup flower
  3. Make ready 1 shot cognac
  4. Take 3-4 tbs oil I like olive oil

Instead of being fried, the cheese is usually covered with Brandy extract, and set aflame at the table. I'm Greek and have never seen feta used for Saganaki before. I prefer harder cheeses for texture and taste. I use kefalotiri or even kefalograviera if you want a less salty cheese.

Instructions to make Feta saganaki:
  1. Cut the feta in small square pieces
  2. Now put the flour in a plate
  3. In a medium skillet add the oil and heat it up to medium high temperature
  4. Coat the feta and put it in the pan the trick to this is you want to turn it only one time so make sure it gets nice and golden
  5. Now turn the feta and when it gets golden on the bottom side add the cognac AND WATCH YOUR EYEBROWS IT MAY FIRE UP A BIT OPA.
  6. Now you can top it with a bit of lemon juice

Sorry This was ok but didnt really do it for me. I will always keep Feta on standby now as this makes for a very impressive light. Prawn Saganaki is Greece's famous seafood dish featuring prawns drenched in a fresh juicy tomato sauce and melted Feta cheese. It's ideal as a starter or you can serve it as a main with some rice, pasta or just a big chunk of crunchy Greek bread that is ideally dipped into that rich saltsa! Dip them into the beaten egg, then coat entirely with flour.
