Steps to make Egg kothu chapati:
  1. Keep all ingredients ready. Tear the chapati into small pieces. Set aside.
  2. Heat oil in a pan add fennel powder, onion and green chillies. Saute till translucent.
  3. Add ginger garlic paste and saute till raw smell disappears. Add tomatoes and cook till mushy.
  4. Now add turmeric powder, red chilli powder and garam masala. Mix well.
  5. Add salt enough for this masala. Pour little water and boil.
  6. Add the chapati and mix well.
  7. Set aside in the pan. Add a tbspn oil and break open the eggs.
  8. Add salt and pepper powder for the eggs.
  9. Scramble the eggs and when half done mix everything so it sticks to the chapati.
  10. Garnish with coriander leaves. Serve hot.

Egg Kothu Paratha is made with leftover paratha and eggs mixed with some spicy onion tomato masala. Serve it with any raita of your choice for dinner.
