- Prepare 1/2 cup Toor Dal (Arhar dal/pigeon pea)
- Take 1 Tomato, finely chopped

- Take 3 cup water

- Get 1 cup whole Wheat flour
- Take 1/4 cup Besan (gram flour)

- Prepare 1/4 tsp red chilli powder
- Prepare 1 pinch Asafoetida (Hing)
- Prepare 2 tsp oil
- Take to taste Salt

- Take For the Tempering
- Take as needed Curry leaves
- Take 1/2 tsp Mustard seeds
- Take 1/2 inch ginger, crushed
- Prepare 3 cloves Garlic, crushed
- Get 1/2 green Chilli
- Get 1 pinch Turmeric powder
- Get 1 pinch Asafoetida
- Prepare 1 pinch red Chilli powder
- Take 2 tsp Tamarind paste or Lemon Juice
- Take 2 tsp Powdered Jaggery
- Get to taste Salt
- Get 2 cups Water
- Make ready For the Garnishing
- Get As needed chopped Coriander
- Make ready 1 tbsp Ghee
Instructions to make Gujarati Dal Dhokli:
- For making dough for dhoklis, first combine whole wheat flour, besan, carom seeds, heeng, turmeric powder, red chilli powder, salt and oil. Add water and mix well. Knead into a smooth and semi-stiff dough (but not as soft as we make for roti/chapatis) and let it rest for 15-20 mins.
- Wash the Toor dal and pressure cook the dal with finely chopped tomatoes, salt, turmeric powder, water and few drops of oil to 3-4 whistles.
- Meanwhile divide dough in 2 equal big balls. Roll out the dough ball to big and slightly thick circle. Now cut dhoklis into your desired shapes. Diamonds(Burfi) shapes are easier.
- Keep aside the dhoklis. Now prepare tadka. In a pan, heat oil. Add mustard seeds and curry leaves and green chillis let it crackle. Add crushed hing, ginger, garlic, turmeric powder, red chilli powder and saute for 2 mins. Add cooked dal to this tadka.
- Add 2 more cups of water, tamarind paste or lemon juice, jaggery and some more salt to taste. Bring to a boil, then start adding dhoklis to Dal. Keep stirring so that dhoklis won't stick to one another. Simmer for 10-15 mins or till the dhoklis are cooked well. Garnish with coriander leaves and enjoy hot with ghee!
