  2. put the three tablespoon of oil in a big frying pan add cumin garlic after a bit add the aubergine pulp tomatoes salt turmeric, stir well then simmer covered 10 minutes if it sticks add 2 tablespoon of water and stir
  3. add the coriander and ground cumin and simmer 3 minutes add onions chilies garam masala remove from heat stir keep covered 5 minutes
