- Now knead the dough for 5 minutes. Rub some oil to the dough and cover it. Keep it in a warm place for an hour or till the dough becomes double in size.
- In the meantime make the filling. Mix feta cheese with chopped parsley, mint and oregano/thyme and keep aside.
- After an hour take out the dough in a work place or kitchen platform and knead well by stretching and folding method for 10 minutes. This will help to make a soft pastry.
- Divide the dough into half. Take the 1st half and roll into a rectangle 1/2 inch thick sheet.
- Spread half of the filling over the sheet and roll it to form a log.
- Cut the log in to 1.5 to 2 inches length, or less according to your choice. Brush with milk.
- Using a wooden stick or back side of a ladle make an indentation or dent in the middle of each piece.
- Pre heat the oven at 200 degree Celsius for 10 minutes.
- Place each piece of fatayer in a baking tray and place them in the middle rack of the oven.
- Bake them for 20 to 25 minutes or till golden brown.
- Let them cool down and enjoy.
